The hazelnut, more discreet, is produced by the hazelnut tree, a hardy tree that appreciates temperate climates. As for the almond, it comes from the almond tree, a Mediterranean tree that blooms at the end of winter, offering a delicate spectacle before giving its nuts. The chestnut is an emblematic fruit of our terroirs. It is harvested when ripe, then rigorously selected for its natural taste qualities: a melting, slightly sweet flesh, with sweet and woody notes, typical of the best local varieties.
This ancient fruit is now experiencing a strong comeback in the modern diet. Available in whole fruit, puree, broken or flour, the chestnut seduces by its nutritional value, its absence of gluten, and its culinary versatility, both in savory dishes (stuffing, veloutés, roasted vegetables) and in desserts (cakes, cream, confectionery).
